Hobart & Beyond: A Love Letter to Tasmania

Tasmania is widely known for having the cleanest air in the world – and after experiencing it firsthand, I believe it. Combine that with some of the best scenery, unique wildlife, a deep-rooted history, and a thriving food and wine culture – it is no surprise that Tassie has been on my list forever. It didn’t just meet expectations, it completely blew them away.

Each day was a refreshing perspective of life in one of the most agreeable places on earth, but if I had to name three highlights, they would be:

1 – Indulging in Tasmanian wines, cheeses, chocolates, and seafood in the fabulously sophisticated mariner town of Hobart.

2 – Making a day of it at the indescribably show-stopping MONA (Museum of Old and New Art).

3 – Plucking oysters straight from the ocean while sipping beautiful Tasmainian sparkling wine, at the stunning Saffire Freycinet.

Hobart

Arriving into Hobart from Cairns, we checked into MACq 01 Hotel on the harbor. This sleek and modern hotel sits on Hobart’s vibrant waterfront and takes you deep into Tasmania’s rich storytelling culture. Every suite and space is infused with the island’s history, bringing to life the characters and legends that shaped it. Its industrial and edgy vibe brings great energy to the Hobart scene.

Hobart might just be my favorite city in Australia— and I’m clearly not alone! We met so many “locals” who had relocated from other Aussie cities, drawn in by the effortless, high-quality way of life. And honestly? I get it.

Let’s talk food, because Tasmania delivers. Some of our most memorable meals of the trip came from the unassuming yet mind-blowingly delicious spots in Hobart. If you ever find yourself here, do yourself a favor and indulge at Frank Restaurant, T42, Blue Eye Seafood, Aloft, and Maria. Fresh, flavorful, and oh-so-nourishing.

A Day at Bonorong Wildlife Park Sanctuary

Bonorong Wildlife Sanctuary was a whole experience! We hand-fed friendly kangaroos, met fascinating Tasmanian devils, and learned about conservation and rescue efforts. Passionate keepers shared stories that brought each encounter to life.

The private visit gave us time to move at our own pace— and also gave me plenty of time to embrace my new Aussie nickname: “Wombat” (thanks, Gil). Naturally, I had to return the favor and crown him “Tassie Devil.” 28 days of traveling together will do that to you!

The Tasman Highway took us south, winding through unreal landscapes on our way to Eaglehawk Neck and the Tessellated Pavement, a natural wonder that looks like a stone mosaic. Then at Waterfall Bay, sheer cliffs plunged into the sea— pure drama and beauty!

One of our favorite stops was at a road side cafe where we had some of the best Tasmanian cheese, and the freshest produce ever imagined – magical!

Our guide, Noah, another highlight!!

An Artful Escape: MONA Museum

For those craving a mix of avant-garde art in an “over-the-top” stimulating environment, a journey to MONA (Museum of Old and New Art) is a must. Founded by eccentric gambler-turned-philanthropist David Walsh, MONA is a subterranean marvel built into the cliffs of the Derwent River.

Getting there is half the fun—arrive by the MONA ROMA ferry from Hobart, where you can sip champagne while reclining on sheep-shaped seats.

Of course, book the POSH PIT for a private lounge, adult bevs, and canapés during your sail.

Once inside, expect the unexpected: exhibits like the eerie Death Gallery and the infamous Cloaca make this museum a provocative, mind-bending experience that challenges perspectives and ignites conversation.

And the smart move? Make a day of it: sip wines from the nearby Moorilla Winery, catch some live music, and savor fire-roasted goodness for lunch in the yard.

And yes, even “posh-ies” need to get their laundry done during an Aussie Odyssey. How clever is this DELICIOUS breakfast place in Hobart that serves up perfect flat whites and avo toast while you knock out your laundry. Genius.

Saffire Freycinet

After our MONA adventure, we road-tripped two-and-a-half hours from Hobart to Freycinet National Park, where Saffire Freycinet sits perched on a bluff overlooking Coles Bay. This is one of Australia’s famed “all-inclusive” luxury lodges, set against the backdrop of the Hazards mountains and Great Oyster Bay.

What did we love most? Just about everything.

The staff? Incredible.

The food and wine? Thoughtfully curated and endlessly delicious (and yes, all included).

The cycling and hikes? Unparalleled.

Our suite? So perfect, we barely wanted to leave.

And, because the world is small, we even ran into friends and shared a magical dinner together!

A highlight of this adventure is the Freycinet Marine Farm Oyster Experience, where you’ll wade into the waters, harvest and shuck your own fresh oysters, and savor them straight from the bay, paired with a glass of champagne.

Hiking and cycling Wine Glass Bay were excellent ways to take in the views and work off the treats!

For an even deeper dive into Tasmania’s coastal beauty, the Saffire Freycinet Seafood and Sparkling Cruise offers an unforgettable exploration of the region’s coastal waters.

Aboard a luxury vessel, you’ll glide past pink-hued mountains, white sandy beaches, and crystal-clear waters while indulging in the finest local flavors.

Sip on a curated flight of premium Jansz Tasmania sparkling wines, perfectly paired with fresh seafood canapés showcasing the region’s bounty. This seamless blend of nature, adventure, and gastronomy offers a truly immersive taste of Tasmania’s coastal beauty.

Saffire’s culinary experience rivals some of the best resorts in the world— every meal was an event, every dish a masterpiece – and I just love the worry-free, all-inclusive experience!

Needless to say, though I have dreamt of Tasmania for half my life, it was as I had hoped and so much more. The island is vast, multi-faceted and literally merits weeks (if not months) to properly explore.

But alas, I am American. Time is short, dreams are big, and I’m just grateful for the taste I got of this wild and wonderful place.

Tassie, you are something special, and I feel privileged to have met you!
